Faraona all' arancia


 Eccovi una ricetta che potrebbe far parte del menù di Natale :

Ingredienti per 4 persone :

1 faraona a pezzi
succo di 2 arance
4 cucchiai olio evo
1 scalogno
1 rametto di rosmarino
1 bicchiere di vino bianco secco
30 olive taggiasche

Esecuzione :

Mettere in un tegame di vetro o di coccio olio, scalogno tritato e dopo 2 minuti la faraona a fuoco vivace per 5 min, aggiungere gli aghi di rosmarino tritati, poi il vino bianco, far evaporare, il succo delle arance e le olive. Far cuocere coperto a fuoco basso per 40 minuti, girando ogni tanto la carne.
Infine alzare la fiamma e cuocere senza coperchio per circa 10 minuti in modo che la faraona prenda colore ed il fondo di cottura diventi denso. Servire ben caldo su un piatto da portata bianco con intorno mezze fette di arancia ed un rametto di rosmarino.

Ingredients for 4 people:

1 guinea fowl to pieces
juice of 2 oranges
4 tablespoons extra virgin olive oil
1 shallot
1 sprig of rosemary
1 glass of dry white wine
30 black olives

Execution:

Put into a pan glass or earthenware oil, chopped shallots and 2 minutes after the guinea fowl over high heat for 5 minutes, add the chopped rosemary, then the white wine and let it evaporate, the juice of oranges and olives. Cook covered over low heat for 40 minutes, stirring occasionally meat.
Finally, raise the heat and cook uncovered for about 10 minutes until lightly colored guinea fowl and the gravy becomes thick. Serve hot on a platter with white around half orange slices and a sprig of rosemary.
